I just baked terrible lazy microwave blueberries muffins.
I am dieting and didn't want my husband to suffer so I thought I would bake him a single muffin.
DON'T DO IT!
So now there are mummy real home grown blueberry muffins about to come out of the oven.
He will eat one, and the rest will sit on the counter.
Dam, I knew it was his fault I can't loose weight.

I didn't do the paper towel/freezing thing and they still tasted good. Perfect with a cold glass of milk or coffee!

That's kind of scary.

When you are ready to throw the diet out the window, try these!
Also... freeze the others that are on the counter... wrap them individually so you can not feel you have to devour them all!

I so need to turn off auto word correct.
Apparently last night I drooled off the truck.
Anyway, yes we have several large blueberries plants and a huge area of raspberries.
And since I am blaming my husband for my diet failures, I will blame auto correct for bad grammar as well..

Humm... "Slack baking". Oddly I pretty much cater to this. Most of the stuff I bake I give away to others. It's just a matter of who is in close proximity to me!

I'm just glad to finally have a name for it...

This was my dessert from last night.

OK, I just have to ask, did you have goat cheese, fresh raspberries, puff pastry and thyme sprigs on hand or did you have to plan and shop for this. I sometimes worry about my pantry when I see the supplies that I DON'T have around when recipes like this sound good. I don't even know WHERE to buy goat cheese!

Goat cheese- had to buy
raspberries- yes, we have plants in the back yard
thyme- yes, I grow basil, thyme, oregano and parsley
Puff pastry- I had some left over, but had to buy.

Goat cheese is available pretty much any grocery store. Even Walmart. I usually make a more involved dinner on Friday nights so I try to plan ahead as much as possible. Always check local resources like farmers markets and such. Even though I live in Podunk, NC (aka Fluffy Edge of Doom) I found local providers of goat cheese, meat, and blueberries!

Here's a tip I got from a muffin cookbook: freeze the uncooked batter.

Put muffin cups in muffin pan. Foil are the best, though they can be hard to find. When I find them, I buy several.

Spoon the batter into the cups. Usually, that would be about 2/3 full.

Place pan in the freezer. When totally frozen, remove muffins from pan and place in freezer bag. I like to put a thin piece of cardboard in the bag.

Bake one or two or how many you want at the same temperature, increasing the time 5 minutes more than the original.

A dozen frozen muffins make a gift, too!

The original is the "normal" baking time (usually 10-12 min,)?

Yes, whatever the recipe calls for! If it calls for 20 minutes, bake 25,

If it calls for 10, bake for for 15, etc.
