I added about 1-1.5 tbs of Worcestershire sauce for some extra taste (delish!), but it's not in the recipe so obviously it's optional ;)

Hi. Does anyone have a no-fail recipe for fried chicken done in an electric skillet? I'm especially interested in temps/times as well as seasoning and batter/dredging info. Thanks!

Zucchini Bread

The zucchini bread recipe in the About Theme is very good and I've made it several times since printing it last year. We had so much zucchini this summer that I grated a lot of it, packed small baggies with 1 cup each, put all the baggies in a large bag and froze them.

When you take the baggies out of the freezer to use them, do you thaw them out and squeeze out the excess liquid?

My Zucchini crop has been very poor this year. I had been hoping to try a recipe for the bread which uses a yellow cake mix for starters. My tomatoes and cucumbers are thriving in the heat and humidity, but the zucchini plants look half dead.

I just thaw the zucchini enough to be able to mix in with the wet ingredients and don't squeeze out the excess liquid. I thought it would be the same amount as if using fresh shredded zucchini. I froze it in one cup portions because I usually just make one loaf at a time.
I have a loaf in the fridge right now........make that a half loaf. One of my Lock & Locks is too big for a letterbox but is the exact size to store a loaf.

My one plant was great the first half of the summer. A few were hidden under the leaves and grew HUGE before I saw them. About mid July it died, so I'm glad I froze some before then.

I don't squeeze out the excess liquid, but I definitely don't use all of the liquid in the bag--maybe half. After I've mixed the batter, I look at it and decide if I want to add a little more of the liquid. A very imprecise process, unfortunately.

I thought they looked good and the prices were reasonable....so I loaded up a "shopping cart" and was going to buy a few to try.....and then the shipping charges were totally crazy. Uh, Not gonna happen.
I'll just have to get Ryan to dehydrate some pulled pork next time he does his hamburger!! LOL

It's remarkable that people from other parts of the country find TJ's much pricier than their average store. In central MA, you can get some crazy bargains there compared to all of the other stores in the area!
*Things we can't live without because the prices are the best in our area:
Extra virgin olive oil
plain nuts
Quarts of full-fat organic yogurt
Their sushi (best tasting grocery store sushi I have found so far, and the best prices too.)
*Things we love to buy because they are SO good:

Salt & pepper potato chips
chicken tamales
Pickled beets
Corn and chile salsa

A gift card! Unless you can get her to talk about what she needs in a sly way. Or see what she has and ask her how she feels about that product, is there an upgrade or newer item she might want.

I like the gift card idea, but if you really are set on a gift, I would suggest one of Williams & Sonoma's dishsoaps. It's not something that one usually buys for one's self but they smell soooo good and are a lovely splurge gift. Regular price is $12.95 for one, but if you get the sale ones, you can get two at 9.95 each!

I saw some cute ones at Sur La Table, as well as a "cupcake kitchen towel" for $10. Anthropologie has a cute dish towel called "Patisserie", but that is really at the top of your budget. They have other items in the $16 range.

I agree! Although, I don't have only and would love to have some but, it's not something that I would think to buy for myself.
Fun cupcake, bread, dessert paper liners are always welcome gifts for me at least. They help add a little whimsy to what I bake which is good because I give my friends, family and co-workers about half of what I make. My guinea pigs enjoy my experiments just a little more if they look delicious AND pretty, lol.
Or what about a personalized apron, maybe a design that your friend likes or monogrammed?
No matter what you choose they'll love it because it came from you and you put a lot of thought behind it :D

I'm thinking nice kitchen towels and/or mits/potholders are also something you can never have too many of.
