I felt guilty telling about shoofly pie and not including a recipe.

From p. 466 Esther Shank's "Mennonite Country-Style Recipes & Kitchen Secrets

9 “ unbaked pie crust – have ready

1 cup flour
2/3 cup brown sugar
2 tbsp margarine

Mix together until crumbly. Reserve ½ cup crumbs

½ cup dark corn syrup
½ cup sorghum molasses
1 egg
¼ tsp salt
¾ cup hot water

Blend into remaining crumbs until mixed well

1 tsp baking soda
Another ¼ cup hot water

Add. Pour into crust. Top with reserved crumbs.

Bake at 400 degrees for 10 minutes. Then reduced to 325 degrees and bake 30 minutes more until center doesn’t shake.

Variation: Add 1 cup angel flake coconut to crumb mixture.



The other recipe is from p. 280 of More-With-Less Cookbook
(Here’s a good recipe from the Orie Miller home for the famed Pennsylvania Dutch specialty. Rich, yes – but also cheap! Delicious served warm with cold milk to drink.)

Serves 6
375 degrees
35 minutes

Preheat oven to 375 degrees.
Prepare 1 unbaked 9” pie shell.
Cut together with pastry blender:
1 c. flour
½ c brown sugar
2 tbsp. Shortening or margarine.

Reserve ½ c crumbs for topping.

Combine in bowl:
1 c. Molasses
1 egg, slightly beaten
¾ c. cold water
1 tsp. soda in
¼ c. hot water

Add crumb mixture and beat together. Pour into unbaked pie shell. Sprinkle reserved ½ c. crumbs on top. Bake 35 minutes.


(both Esther Shank and More-With-Less are staple cookbooks in the Mennonite Homes I’ve been in, so I don’t know which recipe is best, but I’m sure they are both excellent!

I maybe have had both? Either way, excellent!

Pi was there for ..like 2 seconds. Is it gone because i'm math impaired?
