It's family vacation time, and I'm heading down to Lancaster, PA with my RBB's (Reluctant Boxing Buddies) and two Noxers, but I will find boxes....oh yes; I WILL find boxes, nonetheless.

I have a couple I want to get on the way down there, but have to make sure they don't take too long in 90+ heat. Ah, but there are some near caves and some in buildings and some in cemeteries an they are all calling my name!!!!

While there, I will probably mix it up with boxes at places we are going to, a couple the RBB's said that they'd like to do with me and others that I will get in the mornings while the gang is still sleeping.

It's always a delicate balancing act when going on vacation with a group like this, but it'll all be good!!!

Hope everyone enjoys their Independence Day and Weekends

This was my dessert from last night.

OK, I just have to ask, did you have goat cheese, fresh raspberries, puff pastry and thyme sprigs on hand or did you have to plan and shop for this. I sometimes worry about my pantry when I see the supplies that I DON'T have around when recipes like this sound good. I don't even know WHERE to buy goat cheese!

Just wanted to say what fun we had yesterday. Job well done jackbear and joystar for hosting such a great event. Shelter location perfect, food and beverages delicious, carves spectacular, trails wonderful (jealous of all the oak trees). Liked the garbage plate idea and how we built on it through out the day. It was great to see old faces and new ones. Wished we could have gotten more exchanges and chatted some more. We all know how that goes with unfound tupperware awaiting. And the breeze with the 93 temp quite nice. Thanks again for a great time
Macaroni salad

Hi!
I have a question on how to make macaroni salad stay creamy. I went to a grad party last year and the mac sal was so good. I asked the guy how he did it and he said he just used regular Hellmans mayo. When I do that, the pasta tends to absorb the mayo and it gets dry. I cant imagine using the whole jar of mayo, but maybe thats what i need to do? Hello calories!!

My friends mom said something about how she lightly coats the pasta in oil first before adding the mayo, to help it a bit. Unfortunately she is on vacation and I cant ask her. I need it for tuesday.

any ideas on how to make it creamy and stay creamy over a few days?

Goat cheese- had to buy
raspberries- yes, we have plants in the back yard
thyme- yes, I grow basil, thyme, oregano and parsley
Puff pastry- I had some left over, but had to buy.

Goat cheese is available pretty much any grocery store. Even Walmart. I usually make a more involved dinner on Friday nights so I try to plan ahead as much as possible. Always check local resources like farmers markets and such. Even though I live in Podunk, NC (aka Fluffy Edge of Doom) I found local providers of goat cheese, meat, and blueberries!

Hello calories!!

Ha ha! You want calories??

Make the pasta in the box (or 2) of Kraft deluxe macaroni and cheese. Mix the cheese package with some mayo, shredded carrot, chopped celery and onion (and whatever other veggies you normally use). Stir in a tablespoon or 2 of sugar, salt and pepper. Mix with macaroni. Add additional mayo if necessary. This one also stays wetter for you.

As for normal mac salad, stir in a bit extra mayo right before serving... it won't have time to soak up and will be delightfully creamy. Can't really help you for the few days after.

We were at the south rim just a few weeks ago. A gentleman from Spain was having trouble getting around. He didn't speak English and his niece who did speak English got sick and backed out of the trip last minute. He really wanted to see the glass balcony so I asked the guide about it. She said it was 5-1/2 hours west on the Indian reservation; not actually part of the national park. He had just come from Las Vegas but was willing to back track just to see it.

From one reptile to another! The only reason I haven't been boxing this weekend was because I had to change a fuel pump in my truck and I've been helping my son work on his roof. The only thing I DON"T like about this weather is that Moose will turn our A/C up until you could hang meat in the house! I go from shorts and t-shirts to sweats!! Hoping to get out and box a bit today- hey I fixed the truck, I should be able to go somewhere, right??!!

Moose (who is the cook of the family) says to make it up like usual, store in tightly sealed container. Make extra sauce and put it in when you get to your event. That way the mayo won't absorb. Goes without saying to keep pasta and extra sauce chilled. Good luck!!

Something that will help.... make sure all your ingredients are very cool, including the macaroni which needs to be fully cooked, not al dente which will mean if undercooked, it will continue to try absorbing moisture. Also don't over drain the pasta product any extra moisture that clings is a good thing. And as mentioned above, extra dab of mayo at the beginning will help as well.

I like to work at the salad while the mac. cooks by chopping the ingredients (celery, onion, coarse chopped green and black olives, etc. ) then when pasta is ready, add and mix all those ingredients before adding the mayo.

Please note.... I don't actually use mayo for mac salad but rather Miracle Whip Salad Dressing. I use Helman's/Best Foods Mayo on my Potato Salad which is another layering process... LOL, seems like I "work" at making these "tossed" together salads!

With the battle raging to the north in the Wheatfield, (see my previous post) both armies raced to get troops on Little Round Top. The Union was first by some 15 minutes. Sent by Brigade Commander Colonel Strong Vincent to defend the southern slope of Little Round Top, Colonel Joshua Chamberlain found himself and his 20th Maine at the far left end of the entire Union line. The 20th Maine’s orders were to hold their position “at all hazard.” He understood the strategic significance of the small hill. The men from Maine did not wait long for the 15th Alabama under Col. William C. Oates, to charge up the hill, attempting to flank the Union position. Time and time again the Confederates struck, until the 20th Maine was almost doubled back upon itself. With a third of his troops down and ammunition nearly gone, Chamberlain recognized the dire circumstances and knew he could not hold his position and could not retreat. His only option was to charge the enemy…”BAY-o-nets!!”, he cried out.

He ordered his left wing to initiate the charge. The 20th Maine charged down the hill, with the left wing wheeling continually to make the charging line swing like a hinge, thus creating a simultaneous frontal assault and flanking maneuver, capturing hundreds of the Confederate soldiers and successfully saving the flank. During the charge, Chamberlain came face to face with a Confederate captain who was aiming a Colt navel revolver at his face. He pulled the trigger but the gun misfired. Chamberlain now with his sword at the captain's throat, demanded that he yield which he did. Chamberlain kept the revolver.

Chamberlain sustained two slight wounds in the battle, one when a shot hit his sword’s scabbard and bruised his thigh, and another when his right foot was hit by a piece of shrapnel. Many years after the war, a soldier named Herbert Heath of the 15th Alabama wrote Chamberlain to tell him that twice during this battle he had Chamberlain in his sights, but both times “a queer notion” came over him and he could not pull the trigger. The soldier said he was glad how things turned out. Another trooper of the 15th Alabama wrote after the war that he too had Chamberlain in his sights, but just as he fired, a Maine private stepped in front of the Colonel and was shot dead. It is said and Chamberlain himself believed that he was “In the Hands of Providence.” That BTW is the name of a good biography about Joshua Chamberlain.

Note: Strong Vincent was killed minutes after he placed the 20th Maine in their flank position.

I wonder how many of those missing letterboxes are really just hidden in a new location?

I had this happen with one of my first plants several years ago. I hid the box and had a few finders then I started getting reports that it was missing. I made a new box and hid it again but a few months later, I got a found report on the original one. I also received an email from the person who was hiking through the area, found the box, took it home and researched letterboxing and then returned it to the spot they thought they found it - about 20 feet away from where I had actually placed it. So, it DOES happen!

i so feel your pain girl.
My mother owned a golf course. My brother is a Greens Superintendent on Torry Pines Golf Course. My Dad starts his day on the driving range. i HATE golf.

It's currently 57* in Anchorage. Will need to remember the woollies

Its NOT that cold. Think t-shirt under a sweatshirt and you'll be fine. Maybe a fleece vest with mittens and headband in the pockets.

South Rim has a lot of tourists.
North Rim you can walk down into much easier. And at the North Rim if you have time take in Bryce and Zion. Plus its closer to you.
Be sure to play in Lake Mead before you go to the Hoover Dam. Feed the giant carp some popcorn. Super fun for kids.

We are in contract for a house in bexley, but the storm knocked the power out and we can not complete our inspection before we leave.
But what an adventurous way to end a busy week out here! We finally found a hotel out in reynoldsville with power for our last night here.
If all goes well (everyone cross fingers) we should be in our new house the first week of August. See you all then!

Bexley is a very nice area to live -- and the center of Columbus so you are close to everything. When you get settled and want to go boxing just shout! I am about 30 mins. from you to the west.
