Hi
I am making an ice cream cake for monday's cookout. I have the two layers of ice cream forming in the freezer. I ground up some oreos for the middle layer. My question is, what do I bind them with. I did this one other time and the cookie crumbs just fell out when you cut the cake. I need to mix them with something to make them a little more sticky. Would butter work?

I cant think of what else might work....obviously i still want it to taste good, so I dont think shortening is the answer. I cant use cream cheese cus Dad is coming and he HATES cheese and no peanut butter due to allergies, (though now i think of it, that would be really tasty!) I think butter might be the only thing..

any suggestings are greatly appreciated!

Cake frosting/icing would be good to bind the cookie crumbs together. You could either make your own or use canned icing. That would keep the "sweetness" going in your dessert and would be stickier than butter. Just add a little icing at a time to the crumbs and stir until it looks about right. Let me know how it turns out!

How about Cool Whip? Mix the crumbs in and spread between the layers. Refreeze for about an hour. Since it comes frozen, you know it will freeze well.

Dairy Queen uses hot fudge, or butterscotch, or caramel.....gosh, I'm hungry now! Happy B

I've made this in the past, but mine called for more layers than you mentioned.

Between each new layer, the cake is put back into the freezer to harden.

Oreo crumbs made FROM Oreo cookies (the soft centers seem to add some binding properties)

Start with A Layer of Vanilla Ice Cream, freeze
Layer of Hot Fudge Sauce, freeze
Layer of Cool Whip, freeze,
Layer of Cookie Crumbles
repeat with freezing: Ice Cream, Hot Fudge, Cool Whip and Sprinkle remaining cookies crumbles on top

Final Freeze: at least 24 hours to firmly harden. Let stand up to 20 minutes before serving. (no longer or you loose the frozen properties)

I'm an "expert" in ice cream cake making! I say that because I used to be an Assistant Manager at a Ben & Jerry's and I learned from them. :) The way we made ice cream cakes was to take a metal cake pan (usually round but we had some square ones too) and fill it with ice cream. If it won't shove down quite far enough, use a cup of HOT water to keep dipping your ice cream spade in (definitely use a spade not a scoop to make it easier). Flatten it all out and before you refreeze it again, shove brownie bits into the bottom. We did this for 2 layers. Then put it all in the freezer and freeze overnight.

Next day, whip up a batch of buttercream frosting. Take the cake pans and run them under hot water to get the ice cream layer to pop out. Put buttercream frosting on top of one layer, then put the top layer on top of it and smush down. Refreeze for a couple of hours. After it is frozen together, frost as normal with the buttercream frosting.

Do you have a good recipe for buttercream frosting? I think I am going to lay down a layer of hot fudge then sprinkle the cookie crumbs on it. Problem is....how to you spread the fudge....I won't be able warm it, it will melt the ice cream.

I don't have a buttercream frosting recipe that I really like that much. Wish I'd written down the recipe we used at Ben & Jerry's. By the time it mattered to me, I wasn't working there anymore. I'll let someone else provide a buttercream recipe that they enjoy.

As for the hot fudge, you can warm it up a little to make it easier to spread. It may melt the ice cream a little but I recommend re-freezing the cake after you assemble it anyway, regardless of what you use. Just make sure you use a fudge that will harden enough or the two layers may just slide apart.

You're on one of the right tracks, melted butter works great. I crunch the Oreos in a food processor, then pour in 1/3 c melted butter and pulse a few times more. I don't process the crumbs too finely, people like to see a bit of recognizable oreo in between the layers.

Even easier than a cake is a Mud Pie. Crunch the Oreos, add butter then dump the crumbs into a sprayed 9x13 pan. Cut the paper container off the ice cream, then slice the ice cream with a large kitchen knife. Easier than waiting for it to soften. Top with a hot fudge sauce then freeze. Super fast and easy.

homemade hot fudge that is not too sweet would be a great thing to bind the cookies!
