Force of Five,
Your post was very similar to what i wanted to ask today:
What are your *favorite* cookies ofr your cookie gifts. I need to mix it up a bit this year, and am looking for the one cookie you must make every year. I promise to post my recipe (Buckeyes) later today or tomorrow--once I dig out the recipes from under the post-thanksgiving mess :)
Also, how far in advance do you make your cookies and what steps do you take to preserve them?. I am really wanting to start sooner rather than later this year.
Thanks so much--I held off on asking this because i knew there was a Christmas cookie LTC being arranged, and didn't want to step on toes.

How about this:
Cinnamon Ornaments
3/4 cup applesauce
1 cup cinnamon
1 tbsp. ground cloves
1 tbsp. nutmeg
You will need 2 tablespoons Elmer's glue and ribbons to decorate.
Combine all ingredients. If dough is too stiff, add applesause. If too loose, add cinnamon. Roll out like cookie dough to about 1/4 inch thick. Use cookie cutters to shape and lay on flat surface to dry 2 or 3 days. Make sure to put hole on top, a straw works great!
(this recipe will be sent to Romana for the Letterboxer's cookbook)

Am I crazy, or does this recipe seem to be missing something to make it stick together? Or is that the purpose of the Elmer's Glue, is it mixed in with the other ingredients? Didn't see any flour, so that is what am thinking. Maybe its the cinnamon that takes the place of the flour. Always with the questions, sorry.

I've gotten out of the habit lately, but here's what I've done in the past:
Bake cookies all Thanksgiving weekend.
Place in large Tupperware-like (probably Rubbermaid) containers.
Place in large freezer in garage.
If we were limited to the little freezer above our refrigerator, I don't know what we'd do.
Hope this helps!
Oh, and when I'm mailing Christmas cookies... I just pack them frozen -- they're most definitely thawed-out by the time they arrive. They do need some protection between layers of cookies, though, or else your giftee receives a canister of crumbs.
Blessings, and happy baking!

This is not exactly a Christmas/Holiday cookie recipe, but I did try this over the Thanksgiving holiday and Oh My.....
If anyone likes the Pepperidge Farm Tahoe Cookies (macadamia nuts and white chocolate bits), well hang onto your seats gang...
Using the standard Tollhouse Cookie recipe for the regular chocolate chips, substitute Tollhouse White Chips and add macadamia nuts and bake as usual.
No more P.F. cookies for me, I will be making my own from now on! Wonderful!

Do you leave them as balls or do you flatten them before baking?

you leave them in balls, they will flatten on their own...........
not too much though, kinda like a ginger snap.....and they will have cracks in them, but that's how they're supposed to be.
