We have been trying to find ways to add a variety of whole grains to our diet. I "invented" this recipe a week or so ago and thought I'd share. It makes a ton, but beats cooking each grain separately and it freezes well.

Multigrain Pilaf
1 Gallon water
5 T. bouillon, optional
1/2 c whole oats
1/2 c pearl barley
2 c Brown Rice
2 c Wild Rice
1/2 c. Amaranth
1/2 c. Quinoa
1/2 c Buckwheat

Pour water into large stockpot. Add oats, cover and bring to a boil. Boil for 20 minutes, then add barley. Boil 5 minutes, then add Brown and Wild rice. Boil 10 minutes, then add Amaranth. Boil 5 minutes, then add Quinoa. Boil 5 minutes, then add Buckwheat. Boil 15 minutes, then you're done! Salt to taste. Sesame Seeds are also a nice addition.

I let this cool, refrigerated it overnight, then divided it into 6 containers and put them in the freezer. We've been using it in place of plain rice or pasta and love the taste and texture. Most of the grains we found at the Whole Foods or health food stores. I order the Wild Rice, 5 lbs at a time, from Christmas Point.

I have a question. Are the oats steel cut or is the grain intact?

That is exactly what I was trying to duplicate. It's cheaper to make your own. Several of the grains are different though. No triticale (Try to refrain from making any references to Tribbles, please.) wheat, or rye, and I added the amaranth, quinoa, and wild rice. We grow winter wheat, so I don't remember why I didn't include it. There was probably a good reason at the time.
